When they cut into the pig they found that the fat on the pig was a fluorescent blue.

*edit* I know blue pigmentation is often caused from copper poisoning but all that they have are some old mercury mine shafts that they have filled in. They have also shot wild pigs on the ranch before and none of them have been blue.

They are sending in a sample to UC Davis to see the cause of this, but if anyone knows please feel free to explain because we are at a loss.
 
I posted this to the Dr Neil Degrasse Tyson group on fb and someone posted another story about a similar incident involving pigs in Uganda.

Ugandans Warned Against Eating Blue Pork

KAMPALA, May 12 (Xinhuanet) -- Director of Uganda's Animal
Resources William Olaho Mukhani has warned the public against
eating blue pork, the Sunday Vision newspaper reported.
The warning follows the emergence of a pig abnormality, which
causes the pig's flesh to turn blue.

The abnormality that has not been detected anywhere outside
Uganda, has been dubbed "blue pork syndrome", the report said.
Affected pigs look healthy but when slaughtered the pork is
found to be blue, especially in the fatty areas and other parts
that are normally white.

I also ran across another story of it in China.

Linked it to a friend that does a hog roast every year, he thinks he'll pass on blue hogs.
