Spicy black bean pitas.

This one is a little more labor intensive, but worth it:

Black bean salsa:
Easy enough, you take a can of black beans, drained and rinsed, and put them in a small sauce pot. Smash a couple of them. Add a can of corn, and a little water, about a 1/3 of a cup or so. Add your spices - I went with salt, pepper, chili powder, garlic and cumin. Boil and cook until it thickens. Stir constantly. The time it takes to thicken will depend primarily on how many beans you smashed and how violently you stir. Remove from heat, and put in the fridge to cool. Note: it will continue to thicken as it cools.

Roasted garlic sour cream:
Even easier. Put a couple of cloves of garlic in the oven, wrapped in some aluminum foil, at 375 for a while. Twenty minutes ought to do it, half hour if they are a little bigger. You want them to feel mushy when you press them. Clip the ends, squeeze out the roasted goodness into a small bowl and discard the peel. Mix in some sour cream and a little dill.

Pitas:
Fill your pita pocket with the salsa, some fresh cut tomato and leaf lettuce, a little feta cheese, and the sour cream.

Had my first Indiana pho today

at Qui's over off of DuPont and Coldwater.Freaked the woman out b/c of the tripe and tendon but it was delicious.


A sidenote .. I absolutely love a good fresh spring roll. Fresh greens & carrot, some boiled shrimp inside some rice paper.... yum.


Side of chili paste/peanut butter/soy sauce/ sesame oil to dip it in...
